0:00
This is a 1oz tin of caviar.
0:02
On average this tiny tin cost $120.
0:06
And this is where it comes from.
0:07
Everyone always ask this one question why is it so expensive?
0:11
And is it even worth it?
0:12
So we're traveling all the way to the largest caviar Farm in America to
0:16
uncover the truth and once we're done we'll taste test the cheapest
0:19
and all the way up to one of the rarest
0:21
and most expensive caviars in the world.
0:23
But first let's make some caviar!
0:25
We're with our main guy here at Tsar Nicolai one of the largest caviar
0:28
farms in America I'm Ali Bolourchi
0:30
and I'm the president
0:31
and CEO of Tsar Nicolai caviar Farm.
0:33
We're going to see our native breed of white sturgeon
0:35
that we raised in the nation's only Eco certified farm
0:38
and hopefully make some award-winning caviar today with you.
0:40
I love it.
0:40
I also stole his jacket right now.
0:42
Cold.
0:43
How are we starting our day today?
0:44
So it's bright and early it's about 7:00 a.m. we're going to do some
0:47
ultrasounds and identify the caviar ready females
0:50
and we're going to do the process of selection once
0:52
that process is over we're going to go into the caviar making area
0:55
and begin the actual row extraction caviar making process all right a big ahead
1:00
of us and lots to tackle
1:01
so it's time to mentally prepare myself all right you ready right now yeah
1:05
7:00 in the morning it's good the water is just
1:06
as cold as outside oh great 40° perfect maybe I will keep your jacket
1:10
after all so I got all suited up to get into the sturgeon tanks
1:13
but then ol you let me know one tiny important detail you know really
1:17
in this tank alone we probably have a million dollars in caviar fish
1:20
so really please Joshua don't fck this up I will do my P
1:24
that said I got in the tank anyway
1:26
and immediately felt a little overwhelmed by the cold
1:28
but my main focus was tread carefully
1:30
because there's a lot of expensive sturgeon swimming around I'm stepping I got a
1:33
sturgeon literally right in front of me I mean the fish are literally like
1:36
rubbing up against you they SWAT your crotch every
1:39
so often I kind of like it
1:40
so what we're going to be doing with the ultrasound is we're going to
1:42
get a good look inside the internal organs of the fish
1:44
so we're looking for the ovaries
1:45
and we're looking for ripe eggs themselves it's the most fish friendly it's the
1:48
least stress on them
1:49
and it's the most humane way we can investigate
1:51
that obviously in order to check we need to catch one
1:54
so I give it my best shot I'm about to try holding one see
1:57
if you can grab it yourself all right she's gone all right we're going
2:01
to give that another shot oh perfect a gigantic one good one for Josh
2:04
to handle oh I did it yeah let's go wait wait wait wait no
2:08
no I just got you here I just got you here all right well
2:12
I'll let the pros do this
2:13
so we're kind of looking for
2:14
that nice roton belly they do have a sound you can kind of feel
2:17
it too oh my god wow it's
2:18
so noticeable this fish most likely is rape
2:21
so we'll kind of ultrasound hurt
2:22
so we're going to go through the belly wow this is huge yep
2:26
so that's a ripe female you can kind of see the fine dots right
2:28
beneath that skin layer this is great news we got caviar guys fish
2:32
that size so 120 lb we're going to buy 12 lb of caviar for
2:35
that fish wow now
2:36
that we've selected some Fales we're going to move them into a separate tank
2:38
then we'll do a final taste test to determine
2:40
that those are the fish we want to harvest this is like the earliest
2:42
tasting of any tasting I think we've ever done just to describe the flavor
2:46
there's no salt present whatsoever you really get this really fresh Oceanic flavor it's
2:50
not fishy at all the pearls are literally still warm I mean this is
2:54
the freshest consumable caviar in human existence it's amazing honestly incredible what you just
2:58
got to try is like Day Zero the process of today is to kind
3:02
of see the evolution of flavor right
3:03
so here you have raw sturgeon row
3:05
and that 2% flavor you got today will grow into
3:08
that full flavor profile I'm excited to see the next round you feeling warmer
3:11
I actually do feel warm that's my jacket
3:14
so Joshua here we are at our Hatchery all of our genetics all the
3:17
future species of white sturgeon
3:19
that we produce are all done right here
3:21
so there's no impact on the wild population of fish this is where the
3:24
magic happens wow they're
3:26
so little you kind of seen now how small the egg was you had
3:29
in your hand these fish respa in April
3:30
so about 5 months of growth
3:32
and then from this size to about year two that's the fastest growing at
3:35
year three we'll sex them
3:36
and then the females will go to one tank mes go to another from
3:38
there little caviar love these little guys
3:40
but they're a handful
3:42
as far as constant attention they're the babies okay ultrasound
3:45
and final selection completed now we're moving on to processing
3:47
but first one of our missions today is to learn about what makes caviar
3:50
so expensive let's see
3:51
if Oli can shed some light just wanted to thank you for uh giving
3:54
me my jacket back
3:55
and not telling me it was wet
3:57
so Oli what goes into making caviar why is it the price
4:00
that it is you're on one of the oldest farms in the world kind
4:03
of where the technology to farm sturgeon came to life
4:05
and we try to do it
4:06
as sustainable as possible we antibiotic free
4:08
or steroid free or fish are eating what fish would eat in the wild
4:11
a lot of it is done by hand it's a 10-year-old fish
4:13
so that's a labor of love you're going to be doing some expensive work
4:15
today I love it you're going to see
4:17
if you're R rain Supreme before we process the female fish what about the
4:20
protein what about the meat of the fish guys well they use the whole
4:24
thing so here we are at the end part of our Smokehouse we're in
4:27
NOA tail operation we try to limit waste
4:29
as much much as we can this is our award-winning Applewood smoke a sturgeon
4:33
four ingredients sturgeon salt apple wood
4:35
and a little bit of brown sugar low
4:37
and slow 8 to 12 hours it kind of tastes like the turkey of
4:40
the sea you want to join me yes please unbelievable this might be the
4:44
perfect intro to fish for anybody who may not be a fan of it
4:47
what I love about it is it's incredibly mild it's not fishy
4:50
but you still have
4:51
that Oceanic Umami quality to it it's steak like it's got really intense smoke
4:55
flavor a little bit of sweetness from the brown sugar it's seasoned wonderfully it's
4:59
sort of like like a nice in between of like a nice smoked ham
5:02
and like a jerky
5:03
and like a swordfish Allin one really tasty one day my kids will grow
5:07
up and know that I've been giving them smoked sturgeon
5:09
and it wasn't smoked ham
5:10
and turkey but we'll cross
5:11
that bridge when they're older
5:12
or maybe you never have to now I was time to get my game
5:15
face on cuz I'm entering the inner sanctum where around $250,000 of caviar is
5:19
processed daily they're trusting me to help them do this
5:22
so uh let's not this up our guide through this with millions of dollars
5:26
writing on his shoulders every week CH
5:27
and yang he's kind of a caviar badass every day they process about 40
5:31
sturgeon averaging about 120 kilos total of caviar 9 lb 9 lb of caviar
5:38
from that one fish okay I saw the pros do it I think I
5:41
can handle this it's just uh you know dropping an ounce this would cost
5:43
hundreds of dollars and there's a lot more than an ounce I'll tell you
5:47
that so what's the best method of transfer put my hand right here slide
5:50
it at the bottom make sure nothing connected still drive it this way
5:53
and this way it'll all come out in one piece yeah there's something stuck
5:56
back here is it okay to pull yeah just give it a little tug
5:59
I didn't want to damage it it's kind of easy there wow there same
6:03
thing again unbelievable everybody's standing around me in case I drop it they're like
6:07
please don't get Dro at this stage I was surprised to hear
6:11
that this is now my caviar I'm responsible for it this is my caviar
6:15
there are many other like it
6:16
but this one's mine I
6:18
then stepped into the caviar room
6:20
so there's five steps
6:21
that have to happen in this room
6:22
that are crucial to making this right messing up any of these steps could
6:26
totally ruin what would be hundreds of thousands of dollars of cavar
6:29
so we start with step one screening the caviar step two rinsing step three
6:34
drying step four salting
6:36
and we got to get it down to the exact gr
6:39
and step five the final dry before we pack the caviar into tins
6:42
and have our finished product the moment we've all been waiting for I finally
6:46
get to make my own caviar
6:47
so essentially first we're taking the row we're running them through these fine mesh
6:51
screens extracting every last egg
6:53
as much as possible without damaging them you have to be very delicate very
6:57
careful in this process I'm assuming I've never done this before I don't want
7:00
to destroy thousands of dollars with the caviar I'm going to do my best
7:03
here we go so you want to press down on it just enough where
7:06
the eggs fall right out I'm
7:07
so nervous to destroy the caviar you're pressing harder than I thought you'd have
7:11
to I feel like
7:12
when we think of caviar we think oh this is going to turn into
7:15
a pace but really it's very resilient I'm kind of shocked I guess it
7:18
says a lot about the quality too right they have all these little flaps
7:21
in between them too you got to flip them over a little bit
7:23
and then open it up oh wow okay I'm understanding now I'm understanding now
7:28
this is kind of fun I like it this is analisia our main egg
7:31
washer she'll just kind of rinse around the bowl to get all the eggs
7:34
in there and then
7:35
as you can see all the impurities come up
7:37
and then she'll give it a quick pour being very careful
7:40
as to not lose all the eggs in the bowl kind of like
7:42
when you're rinsing rice in a rice cooker it is right really expensive rice
7:47
what she putting in with the droplets
7:48
so we do four Rines in total the first two Rines we put in
7:51
our mixture to soften up the water first
7:53
and after that we just do Straight water
7:55
so this would be the second wash with the mixture wow
7:58
so delicate it's just an uous process even all the way down to rinsing
8:02
with water is so detailed you want to do the last two I'll do
8:06
that so just pour it in
8:07
and kind of mix them up with the water gently pour it in around
8:10
the bowl yeah and make sure to stir up the bottom my years of
8:13
doing the right thing
8:14
and washing my rice is finally paying off you see you could probably do
8:17
it too if you wash your rice you can take
8:19
that bowl and then we'll go over to the third step
8:22
which is over here there are very few people in the world who get
8:25
to taste caviar through every part of the life cycle
8:27
and I'm excited to say
8:28
that I'm one of them we tried it raw straight from the live sturgeon
8:32
and now we try unsalted
8:33
but rinsed so how does
8:34
that change the flavor wow
8:36
so fresh there's a little bit of umami there it's got almost like an
8:40
egg yolk like creamy pop in your mouth very fresh water flavor
8:44
and texture there's so much flavor naturally sitting there it's waiting to be brought
8:48
out by the salt it's really nice
8:50
and remember after we finish up here we'll be tasting the caviar among various
8:53
other levels of caviar Rarity to see
8:55
if expensive caviar is really worth it
8:57
so my glass has been fogging up after finally realized the trick is I
9:01
just hold my glasses up
9:02
and then use my eyelashes
9:03
as windshield wipers oh my God I can see I'm about to enter one
9:07
of the last stages
9:08
which is salting the caviar extremely important it has to be done perfectly cuz
9:12
this is going to be going out to three Michelin star restaurants for our
9:15
cavar we do the malis salt
9:17
which is lower in salt content we do about like a 3
9:20
and 1/2% salt to our eggs it's not
9:22
that it's lightly salted
9:23
though in my opinion it's just
9:25
that it's salted properly bad caviar is going to be super salty
9:28
and you're not going to taste much else
9:30
but salt this is Eon he's been salting caviar for 10 years
9:34
so he knows the stuff A Little Love Taps we want the weight before
9:39
and after the salt you're going to add until it says 13.5%
9:43
so you got your salt you got your eggs just got to pour it
9:46
in my hands are like frozen to give it a good stir yeah it's
9:50
so soft it's soft
9:51
but yeah they're really firm you could be kind of rough with him make
9:54
sure your hand is all the way to the bottom like this yeah
9:57
and then from time to time bring the bottom to the top to make
10:00
sure that every single eggs get some salt in it you can fill every
10:03
individual egg they're very firm extremely resilient it also feels kind of like I'm
10:08
a kid playing with like a bunch of really tiny Orbeez how are we
10:11
feeling so far looking okay it looks good at me yeah before this sits
10:14
for a bit we're going to give this one more try let's see how
10:17
you do is this my verification moment oh thank you
10:24
so buttery so rich very mild the salt level is literally perfect I mean
10:29
perfect thank you I tried I also had an electronic scale telling me exactly
10:32
what to do this is actually a really good fish that's like a reserve
10:35
level so good Reserve quality cavr Now we move on to the tinning what
10:39
you see here is the last step right before they get tined this is
10:42
Jose what he's doing is removing any impurities from the eggs look he spotted
10:46
that boom impuri is the size of a grain of sand Jose is catching
10:50
and tweezing out by hand don't ask me why this is expensive this is
10:54
the freshest caviar you can get before they get 10 Jose isn't right
10:58
if I try a little bit oh it's incredible every single step of the
11:02
process the caviar is transformed just this bite alone immediate burst of flavor the
11:07
Umami the salt level is absolutely perfect it's buttery
11:11
and that just fresh Oceanic flavor I can eat this right now Jose can
11:15
start off and show you how to pack with 1,700 G
11:17
and then you can pack your own 500 G after
11:19
that one you see what he's doing he's gently pressing it down to get
11:22
rid of all the air pockets on the bottom
11:24
and then he'll pack it on top again my God he Stacks it
11:27
so high see how masterful Jose is
11:29
that spatula is just an extension of his arm
11:32
and by eye he already pretty much knows what 1700 is 23 it's unbelievable
11:39
I'm 28 so verying long time
11:43
but as I watched
11:43
that beautiful tin walk away it was my turn to try
11:45
and mimic 23 years of experience in a single moment it's also not easy
11:49
with everybody standing here watching you like everybody don't be afraid to kind of
11:53
press down on it
11:54
and it kind of give it like a little smear to cover all the
11:56
little her Pockets yeah I need my guy here how am I doing am
11:59
I doing okay he's bullshitting me he's bullshitting
12:02
so now at this point you're just giving a little Mound yeah just a
12:06
little bit more that looks about 500 G
12:08
so just kind of clean up the edges just a little bit holy sh
12:11
how does he do this man
12:12
but just when I thought I was in the clear oh no now I
12:17
have to start over Jose look at this at least I got the practice
12:22
now right the tin becomes
12:23
so slippery and he's moving
12:25
so fast I feel like this one's 10 times messier than the last one
12:29
give it like just another little scoop of caviar
12:31
and then that should be about 500 g yep yep
12:34
that should be good right about there
12:36
so let's see how close you are to 500 540 540 okay okay
12:41
so after packing it we're just going to take these we're going to take
12:43
it to our sterilizer
12:44
and then we sterilize for about like 30 seconds just kind of stand here
12:47
and look awkward so yeah
12:51
and then we'll just take it out
12:52
and then this goes where take it back over there
12:54
so these are little particulars instead of just putting it in I like to
12:57
kind of go at an angle
12:59
and then close it in like this press it down just a little
13:02
if you can see like the bubble where like some juices come out
13:04
then that's good enough we've made it the final step before I cure my
13:08
very own caviar I had no idea how much effort concentration would be required
13:12
to get here day in day out there's tons of people
13:15
that are behind this operation
13:16
but more specifically it takes years just to get to the point of even
13:19
extracting the caviar let alone all the other things you need
13:22
so as i s my label I finally understood
13:25
that truly fine caviar is more than just a price tag I I just
13:29
made my own caviar I feel like I'm walking into tasting this caviar with
13:33
a completely different Viewpoint of it
13:35
and a whole new Found Love of it you did 12 years in a
13:38
day you did a great job you were Relentless our shoes got wet our
13:42
socks got wet my jacket got wet
13:44
but by the end of it I think we gained an appreciation for each
13:46
other's craft that was incredible thank you
13:48
so much for doing this for us
13:50
and showing us literally your whole process you ever decide for a different career
13:53
path there may be a future here
13:54
as our Nikolai team opens the door to you Joshua okay it's good to
13:57
know that there's always a fallback now let's taste some caviar now for the
14:00
big question we've seen the whole process of caviar
14:04
but there are more varieties at many different price points than you could possibly
14:08
imagine that's why I brought in three taste tessers to try four levels of
14:12
caviar we have Martins the World's Strongest Man from 2019 is he a local
14:16
college student and Chef Christian is caviar worth it
14:19
and does it get better the more you spend let's find out the most
14:23
holistic way to enjoy caviar just purely
14:25
as it is is to do what is called a bump you put a
14:27
little dollop on your wrist you suck it off your wrist
14:29
and you eat it like
14:30
that that said we instead decided to do it on a chip with a
14:33
little bit of creme fresh I think it's the easiest way to introduce anyone
14:36
to caviar as long
14:37
as the chip is not too salted
14:39
and not over fried
14:39
then you end up with really just a crunchy vehicle to
14:42
then taste the caviar
14:43
and the creme fresh helps mellow out the flavor of the Chip
14:46
And you end up with a really nice caviar tasting something
14:48
that everyone can enjoy have you ever had caviar before I have okay
14:51
and your thoughts on caviar I like it I love caviar it's nice decent
14:57
I don't eat it often I don't go to a restaurant
14:59
and like yo I'm about to drop a bag
15:02
if it's there and it's offered I'm taking a bump
15:04
so we have our first timer with caviar
15:06
which I'm pumped for you to try this is level one we've mixed
15:08
and matched these they could be high they could be low give it a
15:11
taste let me know what you think oh I'm excited for this we're thinking
15:19
creamy I was expecting it to be like a little grittier
15:22
but that one was like a little more gel smooth like a lot of
15:25
people would assume fish eggs are fishy this wasn't offensive like it don't like
15:28
it love it hate it a little underwhelming for my taste I want it
15:32
to pop I want it to pop I don't mind it it kind of
15:34
reminds me of like blue cheese interesting interesting not
15:37
as Briny as I'd like
15:39
or I'm used to
15:40
but it's good yeah it's good it's okay it's okay yeah okay since you've
15:44
never had cavier you may not know where to place your guess on this
15:47
but how much do you think a 1 oz tin is
15:49
and give me a guesstimate on the price for
15:50
that one I want to say that's $55 $60 like $50
15:57
because it's not that great I I think it's like $1,000 $11,000 wait let's
16:02
let's let's start over $7 million just to give an idea for
16:06
that size the average price is 120 unreal really okay what do you think
16:10
this one is at would you say it's at 120 lower I think this
16:13
one's over I just have this Prejudice thinking
16:15
that the more expensive something is the less interesting it's going to be this
16:18
is actually the cheapest Cav this is a $72 o tin it is the
16:24
petan classic duranki I would argue this is the simplest low EST chillest form
16:29
of caviar nice would you say
16:31
that this is worth it of my money maybe
16:34
if someone bought it for me h no I think that's worth it for
16:37
a first time buyer I wouldn't break the bank okay let's move on to
16:41
the next round we're on to level two give it a try let me
16:44
know what you think oh
16:46
that crunch I heard from here oh that's good now
16:49
that is good that one tastes a little more salty a little more Briny
16:52
it's a little bit more on the creamy side I like flavor on the
16:54
brininess it pops better is it better than the last one yes I like
16:58
that one a little bit better better than the last one
16:59
and by how much this was a standard for
17:01
that first one right there I don't know how much more I gave it
17:04
so incremental but noticeable yes yeah I think I like the last one better
17:08
I could get more Umami from it give me your best guess on the
17:11
price for 1 oce of this
17:13
if the flavor is salty
17:14
or more strong I would assume it's more expensive maybe 90 let's go 65
17:20
120 strong guest this is the SAR Nikolai Reserve gold standard caviar you'll see
17:25
it in a lot of restaurants three Mission St restaurants
17:26
and it comes in at $140 would you say
17:29
that $140 ounz tin is worth it it is not worth it I like
17:33
the taste of that one better
17:34
so that one would be more worth it to me the price is still
17:37
it's up there up there for someone who enjoys it isn't just looking for
17:40
a bang for their butt
17:41
if you want good caviar
17:42
and you're willing to pay a solid amount this is I would say the
17:44
gold standard let's move on to the next level we're on to level three
17:48
give yourself a taste oh oh yeah that's what I was looking for
17:53
that one tastes more intense such an interesting flavor to describe besides like salty
17:57
I feel like I'm experiencing the sea right now Oceanic almost Oceanic that's the
18:03
word one word that comes to mind is sharp like in a crisp way
18:06
like champagne good level on brininess a hint of bitterness just a hint I
18:09
like it it's a little gritty like Sandy it's like a solid mix between
18:13
like a gel and
18:14
then yeah kind of like sand it's got a bit of Pop to it
18:17
but it also has got a creaminess to it I like
18:20
that one that's my favorite
18:21
so far do you think this one is better
18:22
or worse than the last one I feel like they're kind of even just
18:25
as good but not better it's very close to the first one the first
18:28
one was was very interesting it had almost like a Herby taste to it
18:31
this one is just like pure classic caviar taste what would you say you
18:34
think this one is priced at could be higher could be lower H I'm
18:38
going to guess 150 based on the last one I would say that's like
18:40
a 90 to 100 range I don't think it's one of the more expensive
18:44
ones I would give it 90
18:45
and this is the petran SAR Imperial hybrid Beluga caviar
18:50
and it comes at $315 per ounce oh my goodness jeez it's expensive
18:56
because it's considered the cream of the crop also makes the biggest eggs did
19:00
you feel like those eggs were bigger it did feel bigger bigger is not
19:02
always better so now
19:03
that you know the price is it worth it flavor wise I think the
19:06
second one I tried had more depth I enjoyed the second one more ooh
19:10
that one is worth it
19:11
if I had money ready to spend on delicious food that's the one I
19:14
would have bought compared to the last one they kind of taste the same
19:17
to me so I would say not
19:18
as worth it huge statement you just saved
19:20
so many people so much money all right we're on to level four oh
19:26
oh it's more creamy it doesn't have
19:28
that that pop that the previous one had
19:30
but it's way more fishy it almost has like a pure taste lean towards
19:34
more ikura than caviar
19:35
that one tastes more fishy to me like an ooni like Flavor almost Briny
19:39
Oceanic I like that it doesn't linger too long like it's just a perfect
19:42
amount of funk it will smooth the pearls didn't really necessarily pop more
19:46
so melt I like
19:47
that would you say this one was better than the last no it's different
19:51
I can't say it's better
19:52
but I enjoyed it more I think the previous one's my favorite cuz I
19:55
love that pop I'm craving
19:56
that when I think of caviar
19:58
so I'd say this is my second favorite give me your guess on what
20:01
this one is price T
20:02
then the saltiness makes me think it's more expensive I'll just say like 300
20:05
I'd be surprised if it was more than 200
20:08
because of the intense flavor I'm going to put this one at 200 this
20:11
is almma albino acetra this is the rarest caviar on Earth
20:16
because only one albino sturgeon is born out of every 10,000 sturgeon
20:20
and it comes in at a $445 per ounce 10 wow jeez out of
20:26
all the ones I've tasted I priced
20:27
that the most and I I think shows I didn't know it was me
20:30
that much but it definitely tasted more expensive than the rest of them this
20:33
is extra special because it comes from Maris caviar's affiliate Farm in Florida it's
20:37
the only legal American producer of purebred Beluga caviar the most prized style of
20:42
caviar in the world
20:44
and now for the last round of deliberation is this caviar worth it
20:49
as a regular consumer sorry it's not
20:51
as a minimum wage worker no
20:53
but if it was offered to me like this yes anything is worth it
20:56
if it's free yes we
20:59
then asked each taste tester to rank each level from best to worst the
21:03
second one is my top third first fourth three four 1 2 in order
21:07
4 2 3 1
21:09
so in a way the white albino was still up there for you I
21:12
enjoy The Taste the most
21:13
but the second one being almost consistent
21:16
and for that price point I would go for
21:18
that over and over
21:19
and it's the only one I think worth its price tag wow that's a
21:22
banger I love it big thank you to everyone who tastes
21:25
so what's the result is it worth it to buy caviar
21:28
and spending more money does it get you better caviar I think the simple
21:31
answer is there's no real correlation it comes down to the individual's preference
21:34
so yeah maybe spending a little more gets you a slightly better caviar
21:37
but even like Martin said the cheaper one he loved
21:40
but you guys rent is
21:41
so much more important pay rent first caviar second maybe actually groceries
21:45
that fill you maybe
21:46
if it's your first time buying caviar
21:47
or even if you're a seasoned veteran start small
21:49
and work your way up love you
21:50
so much subscribe bye y
