This is something you absolutely can't miss when you're in Delhi.
0:04
And today we're eating some of the greatest Indian street food in Old Delhi,
0:09
including a hidden curry spot that's open for just 2 hours a day
0:13
and attracts die-hard food lovers.
0:16
A street food that will unlock new taste buds you didn't know you had.
0:20
Oh, wow.
0:22
This is the real deal.
0:23
And we'll brave an Old Delhi institution for a near mythical meal
0:28
that opens at 5:30 p.m.
0:30
and sells out in 30 minutes.
0:33
Welcome to Old Delhi, India.
0:35
So good to be back in this incredible city.
0:38
The last time I was here was almost 14 years ago,
0:42
but not even for a moment did I forget the glories of Delhi street
0:46
food.
0:46
This time I'm with my friend Anubhav, who's eaten just about everything in Delhi,
0:51
and today he's taking us to try only the best of the best.
0:55
>> And we are starting with Fateh Ki Kachori.
0:57
That's the most popular kachori spot in Delhi.
1:00
Oh, man, there's a crowd.
1:02
Anytime you're in India or in Delhi, when there's a crowd huddled around,
1:07
you know there's something extraordinary, something incredibly tasty.
1:14
This shop is open only in the daytime and they serve matar kachori,
1:17
then they have chole kulche, and they have kulcha rolls.
1:20
And they're serving everything on a bicycle here.
1:22
Yeah.
1:22
Yeah, so there's coriander, there's ginger,
1:24
the kachoris Kachori is like a puff pastry
1:28
and it is stuffed with dal lentils
1:29
and they serve it with chickpeas.
1:31
Lime juice goes in.
1:35
So it starts with the just the boiled chickpeas.
1:37
Now he's mixing in all the spices, the masala.
1:42
Then in goes a handful of coriander and ginger.
1:47
Yeah, so they kind of just top that kachori with that chickpea.
1:50
He's so fast.
1:51
So with those kachoris, he's just lathering it with that chickpea paste.
1:54
The chutney, ginger goes on, masala spices goes on.
1:58
Sprinkles it with coriander and then more chutney.
2:01
That's the sweet chutney that goes on top.
2:04
But it's definitely not over yet.
2:06
It still goes on.
2:07
Green chilies goes on.
2:08
Sprinkled with onions as well.
2:13
Man, that process of making this kachori is incredible
2:16
and they could do it with their eyes closed.
2:18
They do it just non-stop.
2:20
So usually kachori, there are different versions of kachori.
2:22
Some kachoris are puffed ones.
2:24
Here it is more like a flat one.
2:25
So you pick up a whole >> Yes. the whole kachori?
2:28
Yeah.
2:29
I love the ginger
2:30
and the onions and the coriander
2:32
and all the different chutneys.
2:33
You know this is going to be something
2:35
that touches and hits all of your taste buds.
2:48
Mhm.
2:50
Mhm.
2:52
Oh, wow.
2:52
Mhm.
2:52
It's fresh.
2:52
Mhm.
2:52
That's extraordinary.
2:54
Huh.
2:54
It has like this fruity chutney flavor to it.
2:57
Is that from tamarind?
2:58
It's from tamarind and dry And the mango, yeah.
3:02
Yeah, because immediately you taste this fruity flavor actually.
3:05
But then that's mixed with the warmth of the masala and the spices,
3:08
the crunch of the onion
3:09
and the crunch of the the kachori
3:11
and then there's warm chickpeas all the way through.
3:13
That's an incredible amount of flavor and the ginger.
3:16
Your nose might get stuck into it when you're taking your first bite.
3:20
And it won't matter at all.
3:22
You'll be happy to just absorb all that flavor. unbelievably flavorful.
3:26
This is the ideal snack on the streets of Delhi.
3:36
Jumped in the back of an auto rickshaw
3:37
and we're on our way to the next place.
3:39
They're and they're only open for like 2 hours a day, right?
3:41
>> Yes, they're open but only for the lunch hours.
3:43
Only for lunch.
3:44
But there's just nothing quite like the energy
3:47
and action and non-stop flow of humans throughout Old Delhi
3:53
and the bazaars.
3:58
Okay, thank you.
3:59
Oh, sorry.
4:00
Sorry.
4:00
Okay, we have abandoned the rickshaw.
4:03
It's the traffic is non-stop.
4:05
So, we're going to walk on foot over a little wall.
4:07
Okay.
4:22
That was a journey to get here, but we have arrived.
4:24
Welcome to Ashok Meat Dhaba.
4:26
They're only open for like 2
4:27
or 3 hours per day for lunch
4:29
and then they sell out
4:31
and we got here just in time.
4:33
Oh, look at that chicken curry.
4:35
It's all cooked in ghee.
4:36
Oh, man.
4:37
All shining with ghee.
4:39
That looks so rich, so good.
4:47
Oh, and chicken biryani as well.
4:49
That's the with the curry gravy on top.
4:53
Sprinkle of coriander and ginger.
4:56
Nice, okay.
5:01
Oh.
5:01
And then they Oh,
5:02
and then they take the biryani and heat it over the coals to reheat.
5:04
Nice.
5:06
Oh, it's starting to scorch on the bottom of the pan.
5:09
Bring out the flavor even more, another dimension of flavor.
5:12
So, they have the chicken curry, the mutton curry,
5:14
which you have to try both of them and she scoops it out.
5:16
They've been open for generations
5:18
and then they actually reheat it over the charcoal
5:20
so that it starts to sizzle
5:21
and all that ghee starts to melt
5:23
and come out of it.
5:24
Talk about table side service here.
5:27
This is the real deal.
5:28
Finishing it off over the hot charcoal.
5:34
Oh, that's one of the most mouth-watering things you'll ever smell.
5:38
Can hear the crackle and the the sizzle of that ghee roasting and thickening.
5:44
Oh, the basting move is unbelievable.
5:47
And then over here down the alley here is where they're making fresh bread.
5:52
He's patting out the bread fresh right here
5:54
and then they're they have a a tandoor
5:55
which is inside of a barrel lined with clay
5:59
and burning charcoal.
6:00
Oh, what a setup.
6:02
So, it's actually just standing tables.
6:04
You just stand and eat here.
6:06
But, because the table is a little bit low,
6:07
I'm going to They got a stool for me here
6:09
so I can sit down.
6:11
Oh, yeah.
6:11
Now, we're right in the food.
6:12
But, this looks absolutely incredible and they're friendly people as well.
6:16
There's 16 different spices within the the gravy
6:21
and within the chicken curry
6:22
and the mutton curry to make it what it is. 16 different spices
6:26
and ghee and ginger
6:28
and coriander.
6:29
Yeah, before trying it with the bread,
6:31
I think I'm just going to go all in.
6:33
Look at the amount of spice that's been caked up under the chicken.
6:38
Oh, and before I take my first bite though,
6:39
this place also has an amazing history.
6:42
Started in 1984 and it's called Ashok and Ashok because two friends,
6:47
they were both named Ashok and they both loved meat.
6:50
And so, as the legend goes,
6:51
they decided to open a a small restaurant serving what they loved to eat
6:54
most and it's still going strong.
7:04
Oh.
7:07
Oh, wow.
7:07
Oh, good.
7:10
That is unbelievable.
7:13
The richness of the gravy.
7:16
You can actually feel the spices on your tongue held together with the richness
7:20
of that ghee.
7:21
The flavor goes to the bone.
7:23
Oh, all the different cardamoms, the different chilies in there, the cumin in there.
7:27
It's like all a harmony, yet it's all individually represented.
7:32
The pepper.
7:33
And you can see like everybody's like sweating too because they said it's spicy.
7:36
Oh, he said if you love spicy, this is where you want to be.
7:40
These are little little mini breads baked fresh literally right behind me.
7:45
I'll take that chicken.
7:47
I'll grab a piece of the chicken from from below it.
7:54
And then scoop that gravy.
7:58
The thickness of that gravy, the ginger.
8:04
Uh that's one of the greatest chicken curries I've ever had.
8:10
Oh that's phenomenal.
8:11
That is something truly magical.
8:14
And I do want to chase that with some of the green chili.
8:18
A little green chili even enhance things even further.
8:21
Oh yeah.
8:23
That's going to get spicy.
8:25
And some of the onions sprinkled with chaat masala
8:27
as well and a little lime.
8:31
Oh yeah.
8:33
That green chili is hitting now.
8:35
Okay, next up mutton chops.
8:37
Just totally coated in that masala.
8:40
And again I just cannot resist biting it first trying the full effect.
8:50
Oh wow.
8:53
The fat of the mutton is so tender absorbed with all of that sauce,
8:57
the ghee.
8:58
That is a a pivotal moment in my life taking a bite of this.
9:03
The heat of that green chili is fully kicking in.
9:06
Starting to sweat on the streets of Delhi.
9:08
This is pure overjoy and happiness.
9:17
Mhm.
9:17
Oh wow.
9:18
Look I literally did not have to use my teeth for that bite.
9:23
They just slid through like mutton butter.
9:26
And I have seen some people they kind of sprinkle with some some of
9:29
the lemon.
9:31
A little more lemon on here.
9:33
And then for this one I will I I grab some more of the
9:35
bread.
9:37
I love how the bread is so smoky as well.
9:40
Smoky, crispy.
9:42
You can just use it to just Oh.
9:45
Oh, it just completely slides off the bone.
9:47
Like you're almost not sure where the meat and the >> >> this masala comes together.
9:52
It's just a harmony of fat, meat, masala.
10:01
And the flavor of the ginger and the coriander, the black cardamom,
10:04
the long pepper in here.
10:06
And then with every bite you can taste for some of the onions.
10:13
Cleanse your palate and prepare you for the next bite.
10:16
Check out this piece of mutton.
10:18
Oh, look at the the interiors of the meat.
10:21
Look, just with one hand you can just release the meat into your bread.
10:26
Scoop up.
10:31
And again, green chili, onions.
10:42
The flavor just keeps on growing as you keep on eating.
10:45
Okay, next up for the biryani.
10:46
Oh, there's even a piece of chicken in here.
10:48
Nice.
10:49
And then they kind of heated it again, melting that ghee even more.
10:55
Oh, wow.
11:00
You can't go wrong.
11:01
You know, there's biryanis where they're like all cooked together,
11:04
but this one is more like a spiced rice biryani,
11:07
which is made for carrying that chicken curry gravy.
11:10
And I love how this place is just a small little restaurant known for
11:14
people who love to eat curry.
11:16
And this is actually everything they have on their menu.
11:18
They keep it small.
11:19
All they have is mutton, chicken, biryani, fresh bread, onions.
11:23
That's all they have, and that's all you need.
11:26
That's all you'll want.
11:27
This place is the real deal.
11:30
They've been doing it for generations.
11:31
If you love spicy food, you're in the right place.
11:41
Wow.
11:41
I'm actually in disbelief.
11:43
What a meal.
11:46
I don't know how to put it any other way.
11:48
That was just otherworldly.
11:50
And the owners are so friendly, so nice and hospitable.
11:54
Ashok and Ashok, absolutely some of the kings of meat curry in Delhi.
11:59
And I can safely say that's one of the greatest curries I've ever had
12:04
in my life.
12:05
Yep, you heard me say it.
12:06
I'll be dreaming about that curry for the rest of my life.
12:10
And still coming up later this afternoon,
12:12
we're trying a dish that sells out in 30 minutes.
12:16
But before that, Anubhav is taking me to try one of Delhi's highest-in-demand street
12:20
foods.
12:21
Okay.
12:22
Anubhav, where are we heading next?
12:24
>> Now we are going to try the most famous dish of Delhi, chole bhature,
12:28
Okay.
12:29
Yes.
12:30
Another legendary food spot in Delhi.
12:31
>> And did you say that's one of your favorite spots?
12:33
The best chole bhature in Delhi, I would say.
12:39
>> >> We made it, tucked deep within the market.
12:42
And the popularity of this place says it all.
12:46
It is a packed house.
12:48
There's people eating everywhere.
12:49
And you got to kind of be a little bit aggressive to get to
12:52
the front to order your food
12:53
and to see where the all the action is happening,
12:55
but it's all in friendly nature.
12:57
People are here for the delicious food.
12:58
And Anubhav is also mentioning
13:00
that this place is
13:01
so hard to get here
13:02
because you basically have to walk here
13:04
because it's in the middle of the congested market with a non-stop flow of
13:08
human traffic.
13:09
But we're going to make our way into the the center of the action
13:12
and see how they prepare it.
13:13
So Delhi is the capital of chole bhature.
13:16
There are many legendary places.
13:17
In every neighborhood, they will have a spot selling chole bhature.
13:21
And if you ask anyone, they will have their favorite spots.
13:23
This is my favorite spot.
13:25
I love this place.
13:26
Chole is cooked in ghee.
13:27
Bhaturas are cooked in ghee.
13:29
And then it's the best chole bhature in town.
13:31
All in a closet-size space.
13:33
Back there is where they're frying the bhaturas.
13:35
And then after the bhaturas are ready,
13:37
that old guy here is in charge of scooping the chole, the chickpeas,
13:41
with the chutney.
13:42
Oh, and the achar as well.
13:45
So, how many years has it been open?
13:46
From 1940. 1940, okay.
13:49
It's a 1940. 1940 this shop we had.
13:52
Since then we are sitting there.
13:53
Since then we are selling the chole bhaturas.
13:55
Amazing.
13:56
So iconic.
13:57
Okay, this one is for me.
13:59
Thank you.
14:00
Thank you very much.
14:03
Okay, this is really exciting.
14:05
What a place.
14:06
>> Yeah.
14:06
Throughout India, one of the foods
14:08
that Delhi immediately will spring to mind is chole bhature.
14:12
And I remember on my first trip to Delhi 14, 13 years ago,
14:16
I remember just standing in the streets eating chole bhature.
14:19
One of the best memories.
14:20
Every time you come to Delhi, you can't miss it.
14:22
But I've never tried the best chole bhature.
14:25
So, Anubhav has brought us to the best place in all of Delhi,
14:29
which makes it the world's best chole bhature.
14:32
>> That's true.
14:33
By default.
14:34
So, let me break into that bhature.
14:36
Oh, you feel the sponginess of it, the fluffiness of it,
14:40
and the satisfaction of just opening
14:42
that pocket of dough
14:43
and the the way it kind of just you burst the balloon
14:46
and then scoop in a little bit of everything.
14:49
Here we go.
14:56
Oh, wow.
15:02
Again, otherworldly.
15:06
It's very savory, nice and salty,
15:09
and you taste that blend of all the spices.
15:13
Like heavy on the cumin.
15:15
A lot of cumin in there.
15:16
>> They also use pomegranate seeds, dry pomegranate seeds.
15:19
Ah, Okay, Okay.
15:23
And the the chickpeas melt in your mouth.
15:24
They're cooked down there.
15:25
They're super soft.
15:26
And then because that masala is so thick,
15:28
it almost blends into the same texture of the chickpeas.
15:30
Like everything melts in your mouth.
15:32
That's ridiculously good.
15:34
There's also an art to taking a bite.
15:37
A little piece of the potato
15:38
and then after that you can scoop in some of
15:42
that that chana.
15:47
All right, take a bite of the gooseberry pickle.
15:55
Now I bite of the green chili.
16:02
This is the real deal.
16:03
Extraordinary.
16:04
It is so tasty.
16:06
He was also mentioning that now they have other branches, right?
16:08
>> Yeah, they have opened up two more outlets in Delhi.
16:10
Okay, but this is where it all started.
16:12
The original location is always the the greatest experience for sure.
16:16
I think the other thing is the environment just adds to it.
16:19
The hustle and bustle,
16:20
the literal non-stop action
16:23
and energy that just pulses through these lanes of Old Delhi.
16:35
This is superb.
16:39
Oh.
16:39
The king of chole bhature in Delhi.
16:44
And the incredible, still family-run, four generations.
16:48
Thank you very much.
16:49
That was incredible.
16:51
Thank you.
16:52
Nice to meet you also.
16:53
Thank you so much.
16:54
Historical, iconic, and superbly mouth-watering tasty.
17:00
That was unbelievable.
17:04
Oh, I am so happy.
17:06
Could not be happier than walking the lanes of Old Delhi on our way
17:10
to eat more.
17:11
And Anubhav has been doing Delhi food walks for about 16 years.
17:17
And what he's doing for the vendors, for food stalls,
17:21
for local food in Delhi, he's doing an incredible job to promote them,
17:25
to keep them alive within Delhi.
17:28
It's almost 4:00 p.m.
17:29
I think we can squeeze in one more meal before we need to be
17:32
at the 5:30 p.m. spot.
17:34
And luckily, there's another local favorite meal within walking distance.
17:38
Yeah, it's definitely a tight squeeze when you're navigating throughout Old Delhi.
17:43
But being with Anubhav,
17:45
he knows the backstreets and he knows the best food in Delhi.
17:49
So, we are going to eat now Rajma Chawal and Palak Paneer Chawal.
17:52
Oh, okay. >> popular dish in Delhi.
17:54
It is all over Delhi and especially Oh.
17:58
That's Old Delhi.
17:59
That's Old Delhi.
18:00
That's Old Delhi.
18:02
It is an intense amount of people on this market lane in Old Delhi.
18:07
I'm going to move in to try to take a photo here
18:09
and see what how they're scooping it.
18:11
Just be careful of boxes and goods.
18:14
This restaurant is literally the size of your closet.
18:18
Actually, probably smaller than many closets.
18:21
And they serve up the dishes, but it's so packed, it's so congested.
18:25
I can almost not stand here to get a a clean shot of them
18:29
making it and so fast-paced.
18:31
But this is truly where you'll see people from all walks of life.
18:36
This is humanity in its purest.
18:39
It's so incredibly busy,
18:42
but people are so friendly and the food is so good.
18:46
And so, they get rice, they have the paneer, they have the palak,
18:48
which is the spinach,
18:49
and then they just cover it with a whole handful of uh sliced onions
18:52
and chutney.
18:53
And one of the reasons it's
18:55
so packed is because it's kind of at the intersection between the the main
18:59
road over here and the market lane over here.
19:03
And we're at the corner of the intersection.
19:05
Wow, what a place.
19:09
Okay.
19:09
And you were saying this is one of your favorite dishes, Anubhav?
19:12
rajma chawal.
19:13
It's called rajma.
19:14
Rajma which is the kidney beans, then the palak, the spinach, there's some paneer,
19:18
and that then the squirt of chutney.
19:20
And I love how he just puts a whole handful of onions on top.
19:22
Mix that with the rice.
19:24
It's all completely soaked in.
19:26
There's multiple chutneys on top as well.
19:28
All completely hydrated into the rice.
19:36
The kidney beans just melt in your mouth like they're they're so soft.
19:40
And then you can move over, mix it in with some of the palak,
19:42
the palak paneer with the cheese.
19:45
The cheese, the palak is over on this side,
19:47
but kind of just slurried into the the whole mix, the general mix.
19:57
Oh, I love the palak.
19:58
You immediately get that vegetal green spinachy flavor.
20:02
But then it's made into this sauce, so it's pureed.
20:05
Just enough creaminess, but not too rich.
20:07
You get the cumin seeds in there.
20:08
You get the creaminess of that palak.
20:12
Which thing which combination do you like the most?
20:14
Palak paneer or rajma?
20:16
I like them both.
20:17
I couldn't decide which one I like more.
20:18
Man, I love this combination.
20:20
And then every now and then you get some of that like coriander chutney.
20:23
You get a crunch of the onion.
20:24
And I think this is one of those dishes
20:25
that kind of gets better
20:26
and better as you keep on eating it cuz everything starts to swirl
20:29
and mingle,
20:30
mingle together with those chutneys.
20:32
And it's a healthy meal.
20:33
Like like a proper home style kind of dish.
20:37
Yeah, you're right.
20:37
Something that everybody loves, everybody appreciates.
20:40
Comfort food.
20:40
It's comfort food.
20:41
>> Comfort food, yeah.
20:42
That's true.
20:42
Oh, it's so tasty though.
20:43
It doesn't taste heavy like it's not too ghee heavy.
20:52
Yeah.
20:52
It is.
20:53
Pure comfort food.
20:54
And you'll just see there's no seating.
20:57
It's just a stall >> >> on the corner where they continually dish out.
21:00
And people just stand throughout this entire intersection, just enjoying fresh home style food.
21:13
>> >> Well, we made it to the next place
21:14
and we're deep down the back alleys of Delhi
21:18
and we're at a place
21:19
that serves nihari,
21:21
one of the kings of dishes of meat dishes.
21:24
They say it's the number one nihari in all of India.
21:27
They sell out in 30 minutes, 70 kilos of nihari.
21:32
They're going to open up the pot of nihari for the day
21:34
and cart it out all the sections of the nihari
21:37
and we got to be here right on time
21:39
or you'll miss out.
21:42
Here they're making fresh breads.
21:43
It's called khamiri roti.
21:45
The word khamir means yeast.
21:47
So, they add yeast and refined flour then they bake it in tandoor.
21:50
And this bread Yeah, and this bread goes very well with nihari.
21:53
And this is a specific type of bread that's fluffy
21:56
so that you can absorb the gravy of the nihari
21:59
and they've got to be fast.
22:00
Can you imagine just reaching down into
22:02
that tandoor every few minutes with
22:04
that intense heat?
22:07
So, more and more people are starting to gather anticipating the opening of the
22:10
pot which is going to open precisely at 5:30 p.m.
22:14
But, you got to huddle around here.
22:15
You got to be here at the right time or you will miss out.
22:17
Sells out in 30 minutes.
22:19
It's time.
22:20
The crowd is here waiting.
22:22
They've opened the nihari.
22:24
Look at that red layer of oil on top.
22:28
It's like a ritual every evening.
22:31
The nihari master.
22:37
Oh, he's starting to scoop it out.
22:39
Oh, the nalli.
22:41
The bone marrow.
22:43
All made from buffalo.
22:45
Look at the color of that red oil.
22:48
Oh, those are all the buffalo bones.
22:50
Look at how tender it is, the stew.
22:53
The marrow is seeping out.
22:54
Down here, he's taking out all the marrow from the buffalo bones
22:58
and then he got to remove some of
23:00
that oil cuz that's
23:01
so much oil.
23:04
So now that he scooped out the bones,
23:06
then he scoops out some of that oil like ladles of oil,
23:09
the animal fat that has melted into it,
23:11
and now revealing that extremely rich nihari stew.
23:15
And that's been cooking for like 10 hours simmering in there.
23:18
It is so thick, just smoldering.
23:21
What a spot.
23:22
What an experience.
23:25
Oh, and now they're starting to sell it.
23:29
I think you just give however much money you want for the portion size
23:33
that you want.
23:39
This is unbelievable.
23:40
I've never seen anything quite like this in my life.
23:45
Things are in full force right now.
23:47
This is why they sell out in 30 minutes.
23:50
It's like an auction.
23:51
This is like a nihari auction.
23:53
It is just intense.
23:56
And they're just scooping and shouting and yelling, handing out money.
24:00
This is so cool.
24:03
Oh, with the bone marrow and the oil on top,
24:08
sprinkled with ginger and green chilies.
24:10
And I think this is ours right here.
24:15
They have truly taken food to an extreme sport.
24:18
We almost couldn't get out.
24:19
We were almost stuck inside.
24:21
We're going to go eat it in the shop next door where there's some
24:24
seating.
24:25
Here it is.
24:26
Some people say the best nihari in the world.
24:27
We got to mix with the brains, with the meat,
24:30
with the marrow all scooped in with that red oil on top.
24:33
Okay, so I'll go for a piece of the bread.
24:35
And yeah, that's baked fresh.
24:36
It is fluffy.
24:38
It's got to be fluffy to be able to absorb that oil and fat.
24:42
And you make like a little pocket.
24:44
And then first before scooping in the meat,
24:45
I'm just going to go for
24:46
that like melted meat
24:49
and oil and the green chilies
24:51
and ginger.
24:52
That's why you have to have puffy thick bread for all that sauce.
25:11
Oh.
25:11
>> >> Oh, wow.
25:15
Oh.
25:15
Nothing will prepare you for your first bite of this Nihari.
25:18
The contrast of the rich meat oil has been melted down with like those
25:25
spices.
25:26
And then you've got the freshness of those green chilies with the heat of
25:28
the green chilies.
25:29
All that meat just simmered until it just completely literally dissolves into the the
25:34
gravy.
25:34
That is a a meat stew of your dreams.
25:37
Look at that.
25:37
It just completely melts.
25:40
You can just break that meat with bread.
25:47
Oh.
25:48
Oh, wow.
25:48
That actually is unbelievably tasty.
25:51
And you probably think I say this all the time
25:53
that it melts in your mouth.
25:55
But if that ever defines a food melting in your mouth,
25:59
it's this Nihari right here.
26:00
You don't need teeth for this.
26:02
It dissolves on your tongue
26:03
and just melts with the meat in the the gravy
26:05
and the oil.
26:07
That's why there's such a crowd, why it's in so high demand,
26:10
and why it sells out in 30 minutes.
26:12
Let's try the brain.
26:14
Over here you can see a piece of the brain that's still intact.
26:17
Buffalo brain.
26:26
Mhm.
26:26
Mhm.
26:26
Oh.
26:26
The creamy and iconic texture, it's melting on my tongue.
26:30
This is truly a mastery of meat cooking until it becomes something truly transcendent.
26:38
In Hindi it's called Nalli Nihari Paya, which is bone marrow, the meat,
26:44
and the the brains all in one.
26:51
Mhm.
26:51
And that was all combination all in one bite.
26:53
You've already heard me say this a few times today.
26:56
It's otherworldly.
26:57
It's like transported to another world.
27:08
Oh, as we're leaving like 30 minutes later, completely sold out.
27:13
That was a once-in-a-lifetime meal experience
27:17
and couldn't have done it without my friend Anubhav.
27:19
This entire day he's Delhi Food Walks.
27:21
He does food tours in Delhi.
27:22
So, go follow him.
27:23
He's an amazing guy.
27:25
